Have guests write their name on a quart size
freezer bag with permanent marker. (This is so
that if there are ingredients they don't care for,
they have an omelet to suit their taste.)
Crack 2 eggs (large or extra-large) into the bag.
(Not more than two.) Shake and squeeze gently to
combine them.
Put out a variety of ingredients such as:
cheeses, ham, cooked bacon pieces, onion,
green pepper, tomato, hash browns, mushrooms
salsa, and of course salt and pepper, etc. Be sure
to include your favorite items.
Each guest adds prepared ingredients of choice
to their bag and shake gently. (Make sure to get the
air out of the bag and zip for the mixing and the cooking.)
Place the bags into rolling, boiling water for exactly
13 minutes. You can usually cook 6 - 9 omelets in a large pot.
For more, make another pot of boiling water.
Open the bags and the omelet will roll out easily.
Be prepared for everyone to be amazed.
Nice to serve with fresh fruit and coffee cake.
Everyone gets involved in the process and it's a
great conversation piece.
You could ask some of your guests to bring the
ingredients already chopped and ready if you are
serving to those other than over night guests.
